Hot stationary bain-maries are the central element of a professional canteen’s food service line – they keep food warm at the correct temperature throughout the entire serving shift and ensure efficient and organised food service for customers. BHS offers a wide range of hot stationary bain-maries – freestanding and DROP-IN drop-in – for schools, businesses and public canteens across Europe.
BHS hot bain-maries are designed for intensive daily use with digitally adjustable temperature, standard GN container system and easy-to-clean stainless steel surfaces.
A hot stationary bain-marie ensures that soups, sautés, main courses and side dishes are maintained at the temperature required by HACCP standards during service – above +63°C. In canteens with high customer traffic, the efficiency, capacity and ergonomics of the bain-marie determine the speed of service and customer satisfaction. BHS offers hot bain-marie solutions for canteens across Europe.
Types and technology of hot bain-maries
Water bath bain-maries (bain-marie) – GN containers are placed in hot water, which ensures even and gentle heat retention without overheating. Ideal for soups, sauces and delicate dishes. Dry heat bain-maries – heating without water, suitable for drier products. Top shelf heating – additional heat from above, which prevents food from cooling on the surface during service and allows working without a lid on GN containers. Hot Bain-maries DROP-IN are built into existing work surfaces or furniture. Freestanding bain-maries on legs with the option to add bain-marie sneeze guards. BHS offers both types for different canteen configurations.
GN container system and configuration
Hot bain-maries are designed to comply with the GN (Gastronorm) container standard – most commonly 1/1, 1/2, 1/3 and 1/6 GN combinations. This allows flexible changes to menu components and storage of prepared food in a standard container both in the bain-marie and in the refrigerator. Configurations are available with different numbers of GN openings – from 2×1/3 GN for a compact bain-marie to 3×1/1 GN for a high-capacity bain-marie. A digital temperature regulator ensures precise heat setting, reducing energy consumption. LED lighting enhances the visual appeal of food during service. BHS helps choose the optimal GN configuration according to the canteen’s menu and volume.
HACCP and temperature control in the bain-marie
HACCP requirements state that the hot serving temperature must not fall below +63°C. Regular temperature measurement and documentation are mandatory. The bain-marie water bath must be cleaned after each serving shift to prevent bacterial growth. GN containers must be replaced using clean containers for each shift – storing dirty containers in the bain-marie between shifts is not permitted. Sneeze guards on the customer side reduce the risk of food contamination in public areas. BHS bain-maries meet European food safety standards and are designed for easy cleaning.
HoReCa usage scenarios
In a school canteen serving 200–500 lunch portions per day – 2–3 hot bain-maries with top heating for soups, main courses and side dishes. In a self-service company canteen – bain-maries on the customer side with a clearly visible range of GN containers. In a hospital canteen with strict HACCP control – bain-maries with digital temperature recording. In a hotel breakfast area – hot bain-maries for warm breakfast dishes with open access for guests.

What is the difference between a water bath bain-marie and a dry heat bain-marie? A water bath bain-marie provides gentler, more even heat – ideal for soups and sauces.
