The BM7700 holds a full gastronorm pan at a steady heat so sauces stay glossy and proteins rest without drying out between service rushes. The FORCAR BM7700 uses an electric element beneath a water bath to transfer gentle, even heat to a GN1/1 gastronorm container. The water bath prevents direct contact between the element and the food, eliminating hot spots and drying out. A thermostat cycles the element on and off to hold the chosen temperature between +30 °C and +90 °C, allowing safe holding for sauces, stews, vegetables and other moist dishes. To use the BM7700, fill the water bath to the marked level, place the GN1/1 container inside, and plug the unit into a 230 V supply. Set the thermostat dial to the desired temperature within the +30 °C to +90 °C range. The element heats the water, which in turn warms the container and its contents. Once the set temperature is reached, the thermostat maintains it automatically. The container remains in place until service is complete, after which the unit is unplugged and allowed to cool before cleaning. The BM7700 is built with a stainless steel AISI 304 structure, chosen for its resistance to corrosion and ease of cleaning in a professional kitchen. The exterior dimensions of 530 mm wide, 370 mm deep and 220 mm high allow it to fit on most worktops or serving counters. The 1.2 kW power rating requires a dedicated 230 V circuit capable of handling the load without tripping. The temperature range of +30 °C to +90 °C covers the safe holding zone for most hot foods, avoiding the danger zone where bacteria multiply rapidly.
