A bain marie counter keeps prepared dishes at serving temperature without drying or burning. The unit holds a water-filled well beneath a perforated false bottom. Immersion heaters warm the water, and the steam rises through the false bottom, gently surrounding the gastronorm container above. This indirect heat prevents hot spots and keeps sauces, soups and vegetables moist for hours. A mechanical thermostat cycles the heaters to hold the water between +30 °C and +90 °C, and an indicator light shows when power is on.
To use the bain marie, fill the well with water to the marked level, then place the GN 1/1 container on the false bottom. Set the thermostat dial to the desired temperature and switch the unit on. The light glows while the heaters warm the water; once the set point is reached, the light flickers as the thermostat maintains the temperature. Remove the container when service is finished, then drain the water through the cock at the front.
The counter is built from AISI 304 stainless steel with a double-walled well for insulation. The exterior dimensions of 660 mm wide, 406 mm deep and 267 mm high fit a standard worktop, and the 12 kg weight allows one person to move it. A UK-type G plug connects the 1.5 kW heater to a 230 V single-phase circuit, the standard supply in British commercial kitchens.
The 1 GN 1/1 capacity accepts a full-size gastronorm pan 200 mm deep. Optional separators and supporters adapt the well to smaller GN 1/2 containers, and a drain cock simplifies emptying and cleaning. All surfaces are stainless steel, so they resist corrosion and wipe clean with a damp cloth. Regular draining and descaling of the well prevent lime build-up from the immersion heaters.
The unit is supplied without GN pans, allowing the operator to choose the containers that suit the menu.
