Soup Terrines

A soup tureen is an elegant table serving dish element that allows you to serve soup, porridge or sauce to guests directly at the table or in a central buffet position. BHS offers a wide range of soup terrines – in porcelain, stainless steel and other materials – for different serving styles and HoReCa formats across Europe.

BHS’s soup tureen range includes classic porcelain terrines with lids and ladles, as well as stylish stainless steel versions for buffet service and banquet serving. A tureen in the centre of the table adds extra aesthetics, heat retention and allows guests to serve themselves more conveniently according to their preferences.

A soup tureen is a classic table serving tradition that is especially popular in banquet service, festive dinners and premium restaurant service, where guests are given an active role in table serving. A tureen in the centre of the table adds a festive touch and ensures heat retention longer than individual soup plates. BHS offers soup terrines to the HoReCa sector across Europe.

Types and capacities of soup terrines

Porcelain soup terrines with lids – classic white or decorative porcelain, 2–4 L capacity, with an included ladle for serving. Stainless steel terrines – more durable, withstand high temperatures, easy to clean. Silver or chrome-plated terrines – premium look for banquets, conferences and gala dinners. Individual mini terrines (0.3–0.5 L) – elegant personal serving at each table. Ceramic terrines – heavier, with a more natural look. Terrines with integrated heating elements – maintain temperature longer during serving. Special mini terrines for each guest are a popular serving method in modern restaurants. BHS offers soup terrines in various sizes, materials and styles for serving across Europe.

Serving styles and table setting

Table serving with a tureen – the tureen is placed in the centre of the table, and the waiter or guests themselves serve soup into plates with a ladle. Allows guests to control portion size and keeps food warm longer than individual plates. Buffet serving – larger terrines (4–8 L) for self-service buffets with chafing dish heating. Banquet service – festive presentation, elegant table setting with silver or porcelain tureens. BHS offers terrines for different serving styles and HoReCa service formats – from school canteens to fine dining restaurants.

HACCP and heat retention

Soup stored in a tureen must meet HACCP temperature requirements – above +63°C during serving. A hot porcelain or steel tureen retains heat for 20–40 minutes, depending on the material and tureen thickness. Terrines with lids retain heat 30–50% longer than those without. It is recommended to preheat the tureen with hot water before filling it with hot soup – this reduces heat loss. Regular washing and disinfection after each use is mandatory. Porcelain and steel terrines can be washed in a dishwasher while maintaining material integrity.

HoReCa usage scenarios

In a premium restaurant, table serving with a porcelain tureen and lid adds a festive character to the dinner. At a banquet – chrome or silver terrines on a white tablecloth create an elegant gala table impression. In a hotel breakfast buffet – large stainless steel terrines with hot oatmeal or other thick breakfast dishes. In a canteen – high-capacity terrines with a ladle for efficient soup distribution. BHS helps choose the optimal soup tureen for every HoReCa format, banquet style and serving concept across Europe.

Frequently asked questions

What capacity tureen should be chosen for a 10-person banquet? For a single table tureen for 10 people, a 3–4 L capacity is sufficient (average portion around 300 mL). For larger tables, two or more smaller terrines can be placed.

Are porcelain terrines suitable for ovens? Most HoReCa porcelain terrines are not designed for ovens – they may crack. Ceramic or cast iron terrines are more suitable for oven use. Check the manufacturer’s instructions.
