The ROCAM CERVO 3 GN1/1 is a bain marie counter designed for holding food at serving temperature.
This type of appliance operates by heating water within a well, which then surrounds the gastronorm (GN) pans containing the food. Immersion heaters, located within the well, are used to heat the water. The heat transfer from the hot water to the food in the GN pans maintains the desired serving temperature. Temperature is regulated using a mechanical thermostat, allowing for precise control over the heating process.
To use the bain marie counter, water is first introduced into the well. The immersion heaters then heat the water to the set temperature, controlled by the mechanical thermostat. Gastronorm pans, which are not included with the unit, are then filled with food and placed into the heated water. An indicator light signals when the unit is operational.
The construction of this bain marie counter is AISI 304 stainless steel, known for its resistance to corrosion and ease of cleaning. It features double wall insulation to help maintain water temperature and improve energy efficiency. A drain cock is fitted for convenient emptying of the water well.
Controls include a mechanical thermostat with a range of +30 °C to +90 °C, allowing the user to select the appropriate temperature for different food types. An indicator light is also present.
The capacity is for 3 GN 1/1 gastronorm pans, each up to 200 mm deep. The power rating of 1.5 kW indicates the electrical load required when the unit is in operation. The dimensions are 1056 mm in length, 660 mm in width, and 267 mm in height. The unit weighs 21 kg.
Cleaning involves emptying the well via the drain cock and wiping down the stainless steel surfaces. Upkeep of the immersion heaters and thermostat should follow standard catering equipment maintenance procedures.
This model is listed in the catalogue under canteen equipment and hot stationary chafing dishes.
