A cold chafing dish keeps prepared food chilled on a buffet line without ice or refrigeration units. Instead of removing heat, it circulates cooled air around the pans, maintaining a steady temperature above freezing. This method prevents condensation on the food and keeps salads, desserts and cold appetisers crisp and safe for hours. The cooling element is built into the base, and a quiet fan distributes the cold air evenly across the two gastronorm wells, so every portion stays at the same temperature.
To use the unit, slide two GN1/1 pans into the wells, set the desired temperature between +30 °C and +95 °C on the control panel, and plug the dish into a standard 230 V single-phase socket. The fan starts automatically, and the internal thermostat cycles the cooling element to hold the set point. A transparent lid can be fitted to protect the food while still allowing guests to see the dishes. When the service is finished, unplug the unit and remove the pans for cleaning.
The entire cabinet is made of stainless steel, including the exterior panels, the wells and the shelf beneath. Stainless steel resists corrosion from food acids and cleaning chemicals, and it can be wiped down quickly between services. The shelf below the wells provides storage for additional pans or serving utensils within easy reach.
The temperature range of +30 °C to +95 °C allows the dish to hold chilled items just above the danger zone while also keeping warm sauces or soups at serving temperature. The 230 V, 50 Hz supply matches the standard single-phase circuit found in most professional kitchens, so no special wiring is required. The footprint of 799 × 735 mm fits on a standard buffet table or counter, and the 880 mm height allows staff to reach the pans comfortably without bending.
Cleaning is straightforward: remove the pans, wipe the wells and shelf with a damp cloth and mild detergent, then dry the surfaces to prevent water spots. The cooling element and fan are sealed inside the base and do not require regular maintenance beyond keeping the air vents clear of dust.
The unit is supplied as a single-camera model with one shelf beneath the wells.
