In the professional HoReCa sector, glasses are one of the most frequently broken and replaced accessories. Therefore, their selection must consider aesthetics, functionality, durability and comparative costs. The correct glass shape is scientifically proven – a wine glass with a wider opening releases aromas more broadly, while a narrower one for champagne maintains bubbles. BHS offers a wide range of glasses for HoReCa needs across Europe.

Wine and champagne glasses

Wine Glasses – white wine glasses with a medium-wide opening preserve aromas, while red wine glasses with a wider opening allow the wine to breathe. Burgundy-style red wine glasses have the widest bowl – usually 450–750 mL. White wine glasses have a narrower shape – usually 300–450 mL. Dessert wines are served in smaller glasses (75–150 mL) for concentrated aroma. Champagne Glasses – flute-shaped to maintain the bubble column, or retro-coupe style for wide, design-oriented presentation. BHS offers wine and champagne glasses in various sizes.

Bar and cocktail glasses

Cocktail Glasses – the classic V-shaped martini/cocktail glass, highball straight cylinder for long cocktails with ice, tumbler and rocks glasses for whisky, lowball glass for On the Rocks. Vodka and shot glasses – 40–60 mL classic shots and 25–30 mL mini glasses. Beer glasses – tulip-shaped 500 mL standard beer glass, Weizen glass for wheat beer, 300 mL half-pint glass. Measuring Cups and Vessels – bartender’s tools for precise dosing.

Glass materials and durability

Crystal glass – high-end appearance with brilliance and transparency, most commonly chosen by fine dining restaurants. More sensitive to mechanical damage and washing cycles. Durable soda-lime glass – the standard for intensive bar and café service, with better impact resistance. Polycarbonate plastic glasses – for outdoor use, events and service where glass is not recommended (pools, outdoor festivals). Glass thickness and base construction directly affect durability – professional series glasses usually have a thicker base and reinforced rim profile.

HACCP and glass care

Glasses must be washed and disinfected in a Glasswasher after each use. After washing, glasses should be checked for chipped edges and cracks – damaged glasses can injure customers and must not be used. Storing glasses on their side is better than on their base – this keeps them clean from dust. Special glass racks are required in the dishwasher to hold glasses vertically and prevent contact with each other.

HoReCa usage scenarios

In a fine dining restaurant – high-quality crystal glass for each type of wine according to the beverage menu, standardised sizes for consistency. In a busy bar with high turnover – more durable soda-lime glass with better impact resistance, cost-effective for replacing breakages. In a café with juice offerings – elegant, tall juice glass models that encourage impulse purchases. Hotel minibar – smaller-format glasses for a variety of beverages. BHS helps choose the optimal glass series for each HoReCa format.

Frequently asked questions

What size glass is recommended for wine in a restaurant? The standard for a red wine glass in a restaurant is a total capacity of 400–600 mL, filled with 150–180 mL. For white wine – a 300–400 mL glass, filled with 125–150 mL. For champagne – a flute-type glass of 200–250 mL. BHS consultants help select the appropriate version.

Are crystal glasses suitable for a dishwasher? Crystal glasses are more delicate – they should be washed in less intensive cycles (50–60°C) or with specialised gentle programme settings. Soda-lime glass is more resistant to high-temperature cycles. Check the manufacturer’s instructions.
