Gas cooking top with high-power small size burners made of corrosion-resistant material have been used. They provide perfect combustion and even heating on the whole pot surface.
A gas burner built for high-output cooking, where the heat spreads evenly across a thick cast iron plate. The gas flame heats the metal directly, so the surface reaches working temperature quickly and holds it without hot or cold spots. This method gives the chef precise control over searing, frying or holding food at a steady temperature, while the solid top also acts as a thermal reservoir that smooths out brief fluctuations in gas flow.
The sequence starts with the operator turning the ergonomic knobs to ignite the pilot burner. Once the pilot is alight, the main burners light automatically and the cast iron plate begins to warm. The knobs allow smooth adjustment from low simmer to full sear, and the centre of the plate can reach temperatures suitable for wok cooking or charring. After use, the operator turns the knobs to standby, leaving the pilot flame ready for the next service.
The construction is a stainless-steel body with a heavy alloy-steel cooking surface. Under the surface, removable burner basins and elements sit in a frame that can be lifted out for cleaning. The chimney is also removable and dishwasher-safe, so grease and carbon deposits are washed away rather than scrubbed off. A piezo-electric igniter built into the top eliminates the need for a separate lighter or match.
Each knob controls one burner zone, giving two distinct heat outputs: a smaller ring for simmering and a larger ring for high heat. The 21.3 kW total power rating means the unit draws a significant gas load, so it must be connected to a commercial supply line matched to the specified gas type. The footprint of 1200 × 730 mm fits a standard worktop depth and allows side-by-side installation with other GORT LINE 700 units, creating a seamless cooking line.
Cleaning involves removing the chimney, burner basins and elements, then washing them in a dishwasher. The cast iron surface is wiped down while still warm to lift food residue, then seasoned to maintain its non-stick properties. The stainless-steel body is wiped with a damp cloth and mild detergent.
The appliance is ordered with the correct gas type specified: G20, G25, G25.3, G2.350, G27 or G30/G31. It carries CE approval from a notified body, confirming compliance with European safety standards for professional catering equipment.
This model is part of the GORT LINE 700 range, designed for modular installation in commercial kitchens.
