As the name suggests, volcanic lava stones are used in lava stone grills. They are placed on a special grid just above gas burners. The gas burners heat the lava stones which results in their burning. The products for heat treatment are placed on the grid above the stones. The fat coming out of the food placed on the grid drips on the hot lava stones, resulting in delicate smoke that gives the dishes the aroma and the taste similar to those prepared on the traditional charcoal grill.
A gas grill that channels heat through natural lava stones delivers intense, even radiant heat across its cooking surface. The stones absorb the flame's energy, then release it steadily, eliminating hot spots and allowing fat to vaporise rather than flare up. This method gives food a distinct charred flavour while keeping the interior moist, a result that direct flame alone cannot match.
The operator positions the food on the V-shaped stainless-steel grid, which tilts in three preset angles to control how quickly grease drains into the drip tray below. A single 7.8 kW burner beneath the stones provides the heat, regulated by an eight-position thermostat valve that adjusts gas flow in precise increments. Piezo-electric ignition starts the burner without an external spark source, and ergonomic knobs let the chef make quick adjustments even with wet or gloved hands.
Grease runs down the sloped grid into the drip tray, reducing smoke and flare-ups during service. The removable chimney sits above the cooking area, directing heat and steam upward; it detaches for cleaning in a commercial dishwasher. A hair-joint connection system on the sides allows the grill to align seamlessly with other GORT LINE 700 units, creating a continuous worktop without gaps.
The body is constructed from stainless steel, chosen for its resistance to corrosion and ease of sanitising in a professional kitchen. The 330 mm by 500 mm cooking surface provides space for multiple portions, while the overall footprint of 400 mm depth, 730 mm width and 850 mm height fits within standard worktop layouts. The 7.8 kW power rating indicates the load on the gas supply, requiring a dedicated circuit sized for commercial catering equipment.
Cleaning involves removing the grid and drip tray to wash separately, while the lava stones are brushed to clear ash and food debris. The chimney, once detached, can be placed in a dishwasher. The stainless-steel body is wiped down with a damp cloth and sanitiser after each service to maintain hygiene standards.
When ordering, the gas type must be specified from the following options: G20, G25, G25.3, G2.350, G27 or G30/G31, ensuring compatibility with the local supply.
