Gas pan enable preparing large amounts of dishes that require frying (e.g. chops, fish) and stewing. The bratt pan’s bottom is made AISI 316 stainless steel which is an universal solution dedicated for frying as well as stewing dishes. Bratt pans are characterized by perfect temperature disctribution, very good thermal conductivity and increased corrosion resitance. All the edges are rounded so that it is easier to keep the appliance clean.
A tilting bratt pan heats a large, shallow stainless-steel vessel with gas burners beneath the pan floor. The burners raise the temperature of the cooking surface evenly, while the sloped sides and wide mouth allow the operator to stir, sear, braise or shallow-fry large batches without spillage. Because the pan tilts electrically, the contents can be poured directly into serving or storage containers without lifting or ladling.
To begin, the operator fills the pan with oil, stock or ingredients, then sets the thermostat between 120 °C and 280 °C. The gas valve opens, the burners ignite, and the pan heats to the chosen temperature. A built-in tap supplies fresh water on demand, so there is no need to carry jugs across the kitchen. Once the cooking cycle finishes, the electric tilt mechanism lowers the front edge of the pan, and the contents flow out through the pouring lip into gastronorm trays or serving dishes.
The appliance is built from stainless steel throughout, including the body, pan and control panel. An electric motor drives the tilting mechanism, while the gas system is protected by an anti-outflow valve that cuts the supply if the flame goes out. A thermal cut-out prevents the pan from overheating, and the 230 V single-phase connection powers the tilt motor and control circuit.
The 32.2 kW gas input provides rapid heat-up and sustained output for high-volume cooking. The 122 L capacity allows large batches of stews, sauces or fried items to be prepared in a single load, reducing the number of cycles needed during service. The footprint of 1200 mm by 930 mm fits standard worktop depths, and the height of 850 mm (1692 mm when tilted) clears most overhead cupboards while keeping the pouring lip at a comfortable working level.
Cleaning follows the construction: the stainless-steel pan and body can be wiped down with detergent, and the tap is removable for descaling. The electric tilt mechanism requires no daily maintenance beyond checking that the motor runs smoothly.
The model is supplied as a single unit with the features listed; no additional versions or variants are specified.
