Gas pan enable preparing large amounts of dishes that require frying (e.g. chops, fish) and stewing. The bratt pan’s bottom is made AISI 316 stainless steel which is an universal solution dedicated for frying as well as stewing dishes. Bratt pans are characterized by perfect temperature disctribution, very good thermal conductivity and increased corrosion resitance. All the edges are rounded so that it is easier to keep the appliance clean.
A gas tilting bratt pan combines the functions of a fryer, braising pan, griddle and stockpot in one mobile unit. Gas burners beneath the pan heat the base and walls, transferring energy directly into the food. The even distribution of heat across the large surface area allows simultaneous cooking of different ingredients without hot spots, while the sloped sides make stirring and turning easier than in a flat-bottomed vessel. Tilting the pan forward pours out liquids or transfers cooked food without lifting, reducing strain and spillage in a busy kitchen.
The operator loads the 80 litre pan with oil, water or sauce, then sets the gas control to the required flame. A thermostat smooths the adjustment between 120 °C and 280 °C, covering simmering, frying and boiling. Once the temperature is reached, ingredients are added and stirred as needed. The electric tilting mechanism is activated by a switch, allowing the pan to be tipped forward without manual effort. A fresh water tap mounted on the side provides instant rinsing or topping up without leaving the station.
The appliance body and pan are constructed from stainless steel, chosen for its resistance to corrosion and ease of cleaning in a commercial environment. The electric tilting mechanism removes the need for a manual lever, reducing operator fatigue during long service periods. A thermal cut-out prevents the pan from overheating, while a gas anti-outflow valve shuts off the supply if the flame is accidentally extinguished, protecting against gas leaks.
The 24.2 kW gas input requires a dedicated commercial gas line and adequate ventilation to handle the combustion products. The 230 V electrical connection powers the tilting motor and control circuit, so a nearby socket is needed. The footprint of 800 mm by 930 mm fits into a standard worktop run, while the height of 850 mm (1692 mm when the lid is raised) allows comfortable access for stirring and loading. The 80 litre capacity suits batch cooking for medium to large operations, holding enough volume for sauces, stews or frying without overcrowding.
Cleaning involves draining the pan, then scrubbing the stainless steel surfaces with a non-abrasive pad and detergent. The fresh water tap allows rinsing without moving a hose, and the tilting mechanism lets the pan be tipped for thorough drainage. The gas burners and flame failure device should be checked periodically for blockages or wear, following the manufacturer's maintenance schedule.
The BHS-G GP2261-080GV+S00 is a standalone unit designed for professional catering environments where versatility and capacity are required. It is categorised under tilting bratt pans in the commercial cooking equipment section.
