A gas boiling pan with an autoclave jacket heats water under pressure to raise the boiling point, transferring heat evenly through the cooking tank without scorching. The pressurised water jacket surrounds the polished stainless steel pan, circulating hot water to maintain a consistent temperature across the entire surface. This method eliminates hot spots, allowing large batches of soups, stews, sauces or vegetables to cook uniformly while retaining texture and flavour. The autoclave system also reduces energy waste by recirculating heat, making it suited to high-volume kitchens where efficiency and precision matter.
To operate, the pan is filled to the marked maximum food level. The operator selects the desired food temperature on the control panel, then ignites the gas burner using the piezo-electric igniter. The water jacket fills automatically, monitored by an electronic level control that triggers an alarm if the water drops too low. The lid is secured with tightening clamps, sealing the gasket to build pressure safely. A safety valve on the lid releases excess steam at 0.05 bar, while a separate pressure valve and gauge display the working pressure of 0.5 bar in the jacket. Once cooking is complete, the drain valve removes water from the jacket, and the hot or cold water tap fills the pan for the next batch.
The unit is constructed from high-quality stainless steel, with the cooking tank made of AISI 316 for corrosion resistance. The pressed balanced lid and polished tank bottom prevent food from sticking, while the electrochemical protection in the water jacket extends the lifespan of the appliance. A gas anti-outflow protection system cuts the supply if the flame extinguishes, and thermal protection prevents overheating. The pan stands on height-adjustable round stainless steel legs, allowing levelling on uneven floors. A high chimney directs combustion gases away from the workspace, and the worktop includes a water drain to manage spills.
The 60 kW gas burner delivers rapid heating, while the 455-litre volume allows bulk cooking without refilling. The 230 V electrical supply powers the controls, water level sensors and igniter, requiring a dedicated circuit in the kitchen. The footprint of 1200 x 1300 mm demands a fixed position near gas and water connections, with a height of 1100 mm (or 2133 mm with the chimney) ensuring clearance above. The IPX4 rating protects the electronics from water splashes, making it safe for wet environments.
Cleaning involves draining the water jacket and wiping the polished tank with non-abrasive cleaners to preserve the surface. The drain valve and water taps should be flushed regularly to prevent scale build-up, and the lid gasket checked for wear. The electrochemical protection requires treated water to function, so the G¾″ connection must be supplied with softened or filtered water. The unit is compatible with multiple gas types, including natural gas (G20, G25) and propane (G30/G31), but the specific type must be specified at order.
Two versions are available: the GK615010-120KN with automatic water supply, and the GK215010-120KN with manual filling of the jacket. Both include the same safety features, stainless steel construction and pressure controls, differing only in how the water jacket is replenished.
This boiling pan is categorised under large-capacity cooking equipment, designed for commercial kitchens, catering operations and food production facilities requiring consistent, high-volume output.
