Body made of high quality stainless steel.
Gas power 34,5 kW
A gas boiling pan heats water in a sealed jacket that surrounds the cooking tank, transferring heat evenly without direct flame contact. The jacket acts as a thermal buffer, preventing hot spots and allowing precise temperature control for large batches of soups, stews, pasta or vegetables. Gas burners beneath the jacket raise the water temperature, while a pressure valve and gauge maintain safe operating levels inside the jacket.
The operator connects the gas supply and selects the type on the control panel. Cold water fills the jacket automatically through the treated-water inlet, with an electronic sensor monitoring the level and triggering an alarm if it falls too low. The cooking tank is filled via a separate tap, and the max food level is marked inside to prevent overloading. Once the tank is loaded, the lid is closed and the gas burner ignited with the piezo-electric starter. The food temperature is set on the control, and the pan maintains the chosen level until the batch is ready. A drain valve at the base removes cooking water, while a separate tap empties the jacket.
The body and legs are made of stainless steel, with the cooking tank bottom polished AISI 316 for durability. The lid is pressed and balanced for easy opening, and the legs adjust to level the pan on uneven floors. A high chimney directs combustion gases away from the work area. Safety features include thermal protection against overheating, electrochemical corrosion protection for the jacket, and a gas anti-outflow valve that cuts the supply if the flame fails.
The 34.5 kW power rating indicates the load on the gas supply, requiring a dedicated line sized for the specified gas type. The 230 V electrical connection powers the control panel, water level sensor and ignition system. The footprint of 1000 x 1150 mm fits a standard worktop space, while the 900 mm height (1785 mm with lid open) allows comfortable access for loading and stirring. The 200 litre capacity handles large service volumes without refilling, and the 0.5 bar working pressure in the jacket ensures consistent heat transfer.
Cleaning involves draining the cooking tank through the 2″ valve and flushing the jacket via its separate tap. The polished tank bottom resists food adhesion, and the stainless steel surfaces wipe clean after each service. The water jacket requires periodic descaling to maintain efficiency, and the electrochemical protection helps prevent mineral build-up.
Two versions are available: the GK612000-100JN with automatic water jacket filling, and the GK212000-100JN with manual filling. The gas type must be specified at order: G20, G25, G25.3, G2.350, G27 or G30/G31. The pan is classified for commercial kitchens under IPX4 for splash resistance.
