A gas boiling pan heats water in a sealed jacket that wraps around the cooking tank. The steam from the jacket transfers heat evenly to the tank, preventing hot spots and allowing large batches of food to cook at a steady temperature without scorching. This method is especially effective for simmering stocks, soups and sauces in volume, where gentle, uniform heat is essential.
The operator connects the gas supply and cold-water inlet, then selects the desired food temperature on the control panel. The automatic water jacket fills to the correct level, monitored by an electronic sensor with a visual alarm. Once the jacket reaches working pressure, the gas burner ignites via a piezo-electric spark. The lid, balanced for easy handling, seals the tank to retain heat and steam. A safety valve and pressure gauge on the jacket prevent over-pressurisation, while a thermal cut-out stops the burner if the jacket overheats. When cooking is complete, the hot water tap empties the jacket and the 1½″ drain valve releases the tank contents.
The body and legs are constructed from high-grade stainless steel, with the cooking tank itself made of AISI 316 stainless steel for corrosion resistance. The tank bottom is polished to improve heat transfer and ease cleaning. Adjustable round legs allow the unit to be levelled on uneven floors, and a high chimney directs combustion gases safely away from the worktop.
Controls include a food temperature dial, water-level indicator, and gas ignition button. The 14 kW burner delivers rapid heat-up while an anti-outflow device stops gas flow if the flame extinguishes. A treated-water connection at G¾″ and two G½″ taps for hot and cold water supply the jacket and tank. The worktop drain, 30 mm in diameter, carries away spillage without flooding the hob.
The 50-litre capacity allows bulk preparation of liquids, while the 800 mm width and 730 mm depth fit standard worktop layouts. The overall height of 850 mm (1380 mm with the lid open) clears most overhead cupboards. A maximum food-level mark inside the pan prevents overfilling and boil-over.
Cleaning involves draining the tank and jacket, then wiping the stainless steel surfaces with a non-abrasive cleaner. The polished tank bottom and pressed lid reduce food adhesion, and the electrochemical protection in the jacket inhibits scale build-up. The high chimney should be checked periodically for blockages to maintain safe combustion.
Two versions are available: the GK610500-080EV with automatic water jacket filling, and the GK210500-080EV with manual filling. When ordering, specify the gas type (G20, G25, G25.3, G2.350, G27 or G30/G31) to ensure compatibility with the local supply.
This boiling pan is listed in the BHS-G catalogue under gas-powered bulk cooking equipment for professional catering kitchens.
