A gas boiling pan heats water in a sealed jacket around the cooking tank, transferring heat evenly without direct flame contact. The jacket maintains a steady temperature, allowing large volumes of liquid or solid food to be simmered, poached or blanched at a controlled rate. Pressure inside the jacket prevents hot spots and reduces fuel consumption, while the polished tank bottom ensures food does not stick during long cooking cycles.

The operator fills the jacket either automatically through a treated-water connection or manually via a dedicated tap. Once the jacket is pressurised to 0.5 bar, gas ignition begins and the 9.2 kW burner raises the water temperature. A visual indicator confirms the jacket water level, while a separate gauge monitors pressure. The cooking tank is filled through a cold-water tap, and the food level is kept below the marked maximum to prevent boil-over. Temperature is set with a dial, and the lid is closed to retain heat. After cooking, the contents are drained through a 1½″ valve, and the jacket water is released through a separate tap.

Construction is entirely stainless steel: the body and legs in high-grade alloy, the cooking tank in AISI 316 for corrosion resistance. The lid is pressed and balanced for easy opening, and the legs adjust to level the unit on uneven floors. Safety features include a pressure-relief valve, thermal cut-out and electrochemical protection against jacket corrosion. Hot and cold water connections are G½″, with a G¾″ inlet for treated water. A 30 mm drain in the worktop removes spillage.

The 9.2 kW gas input requires a commercial gas supply and adequate ventilation. The 400 V electrical connection powers the control circuits, not the burner. A 50 L volume allows bulk preparation of soups, sauces or vegetables, while the 800 × 730 mm footprint fits standard worktop layouts. The overall height of 850 mm (or 1380 mm with the chimney) clears most overhead shelves.

Cleaning involves draining the jacket and tank, then wiping the polished surfaces with non-abrasive cleaners. The drain valve and taps are disassembled for descaling, and the pressure gauge is checked for accuracy. Two variants are available: one with automatic water supply and one with manual filling, both under article GK510500-080EV.

The pan is catalogued under gas catering equipment, specifically boiling and simmering appliances.
