Professional electric range with square cast iron hotplates, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction and 7-position power control ensure precise cooking and safe operation.
An electric hob that transfers heat through four square cast-iron plates, each rated at one quarter of the total power. Cast iron holds and spreads the heat evenly across its surface, so the pan sits flat and the temperature stays steady once set. The hob is built for continuous use in a professional kitchen where multiple pans must be controlled independently at the same time.
Each plate is heated by an embedded element. The operator places a pan on the plate, selects one of seven power levels with the rotary regulator, and the element cycles on and off to maintain the chosen setting. The heat travels from the element into the cast iron, then into the base of the pan. Because the iron is dense and thick, it smooths out temperature swings and prevents hot spots. The hob does not need pre-heating; the iron reaches working temperature quickly and recovers fast when a cold pan is added.
To use the hob, the operator first checks that the three-phase 400 V supply is connected and the adjustable feet are level. Pans are positioned on the plates and secured with the supplied pan stops to prevent sliding. Each regulator is turned to the desired power level; the LED indicator above the regulator lights when the plate is active. Once cooking is complete, the regulators are returned to zero and the pans are removed. The hob is left to cool before cleaning.
The worktop is 2 mm thick 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish. Edges are rounded and the rear panel is also stainless steel. Control knobs are water-resistant to IPX5 and chrome-plated for durability. The front control panel can be removed for access to internal parts, simplifying maintenance.
The 16 kW total power rating means the hob requires a dedicated three-phase circuit capable of supplying the full load. The 800 mm width and 900 mm depth fit a standard worktop cut-out, while the 280 mm height allows under-counter storage or ventilation. At 71 kg, the unit is moved with a trolley or two people. The four 4 kW plates allow simultaneous cooking of multiple items at different temperatures, and the seven-step regulators give precise control over each plate.
Cleaning involves wiping the stainless steel surfaces with a damp cloth and mild detergent. The cast-iron plates are cleaned with a scraper while still warm, then wiped dry to prevent rust. The control panel is removed periodically to access and clean internal components. The adjustable feet should be checked for stability after cleaning.
The model is the PCQT-98ET, a four-plate electric hob in the LOTUS professional catering range.
