Professional gas multifunction cooking pan designed for preparing a wide variety of dishes in professional kitchens. The stainless steel construction ensures durability, hygiene, and easy maintenance.
Pan: 70x51x10h cm
A fixed bratt pan combines a shallow, tilting cooking surface with a powerful gas burner beneath, allowing chefs to braise, sauté, grill, fry or simmer in a single vessel. The broad, flat bowl holds a large volume of food while the direct flame heats the base evenly, transferring heat quickly through the metal and into the ingredients. Because the pan does not tilt during cooking, the entire surface remains usable, and the fixed design simplifies installation in a commercial kitchen where space and gas connections are already planned.
The operator loads the ingredients directly into the bowl, sets the gas control to the desired flame, and ignites it with the built-in piezo spark. A pilot light and thermocouple safety system ensure the flame stays lit and shuts off automatically if it extinguishes. Once cooking is complete, the contents are removed with a ladle or scraper, and any excess oil or liquid drains into a removable collection tray beneath the bowl for easy disposal.
The entire structure is built from 18/10 AISI 304 stainless steel, including the 2 mm thick work surface with rounded edges and a satin Scotch-Brite finish. Chrome-plated details and a rear protective panel add durability, while IPX5-rated waterproof control knobs allow safe cleaning with a hose. An adjustable rear leg and fixed front legs provide stable, level installation on uneven floors.
Controls consist of a gas valve that regulates flame intensity and a piezo ignition button. The unit is supplied with conversion nozzles for either natural gas or LPG, allowing it to be connected to the local gas supply without additional parts.
A 13.9 kW burner draws a significant gas load, requiring a dedicated commercial gas line and proper ventilation. The 800 x 705 x 900 mm footprint occupies a fixed position on the worktop, and the 129 kg weight means the unit is moved only with a trolley or two-person lift. The 70 x 51 cm bowl capacity allows large batches of food to be cooked at once, reducing the need for multiple smaller pans.
Cleaning involves removing the front control panel to access internal components, wiping down the stainless steel surfaces, and emptying the oil collection tray. The waterproof controls and rounded edges prevent trapped food debris, making daily upkeep straightforward.
