A meat grinder strainer determines the texture of ground meat by forcing it through a perforated plate. The 8 mm mesh of this Stalgast strainer produces a coarse grind, leaving visible particles of meat and fat. This method preserves the structure of the fibres, making it suitable for dishes where a rustic, chunky finish is wanted rather than a smooth paste.
The strainer fits into the grinder head behind the auger. As the auger turns, it pushes the meat against the plate; the sharp edges of the mesh cut the fibres into pieces of consistent size. The larger the mesh, the less resistance the meat meets, so the grinder works faster and with less strain on the motor. This balance between texture and workload is why different mesh sizes are used for different recipes.
To use the strainer, the operator disassembles the grinder head, removes the existing plate, and inserts this one in its place. The auger is then reattached, and the grinder reassembled. Once the machine is running, the meat is fed into the hopper, and the auger carries it forward through the mesh. The ground meat collects beneath the grinder, ready for shaping or cooking.
The strainer is a spare part for Stalgast grinders in the 7211 line. It is installed and removed without tools, allowing quick changes between mesh sizes during a single production run.
Cleaning follows the same routine as for the grinder itself: the strainer is removed, rinsed under hot water to clear any trapped meat, and scrubbed with a brush to reach the perforations. It is then dried and stored until the next use.
