Professional glass-ceramic induction hob with 4 independent cooking zones. Made of high-quality AISI 304 stainless steel, suitable for intensive use in professional kitchens.
An induction cooking top transfers energy directly into magnetic cookware without heating the surface itself. A high-frequency electromagnetic field beneath the ceramic glass generates eddies in the base of ferrous pans, raising their temperature while the surrounding worktop stays cool. This method concentrates heat where it is needed, responds instantly to power changes and eliminates wasted energy from open flames or radiant elements.
The operator places a pan on one of the two independent cooking zones, selects the zone with the touch control and sets the power level. The induction top senses the pan and activates only the area beneath it, so each zone can be used separately or together. Once the pan is removed, the zone switches off automatically, conserving energy and reducing the risk of accidental burns. The front panel carries illuminated push-button controls that adjust power in precise increments, allowing fine control for simmering, boiling or frying.
The unit is built from 18/10 grade stainless steel, including a 2 mm thick worktop finished in a Scotch-Brite satin texture. Edges are rounded and trim pieces are chrome-plated for durability and ease of cleaning. A removable front panel gives access to the interior for daily wipe-downs, while the IPX5-rated waterproof control knobs withstand splashes and hose-directed cleaning. Adjustable stainless steel legs level the top on uneven floors and allow secure linking to other Lotus 70-series appliances for a seamless workstation.
A 20 kW power rating draws a substantial 3-phase 400 V supply, typical of heavy-duty commercial induction equipment. The 800 mm width and 705 mm depth provide space for two large pans side by side, while the 280 mm height fits beneath standard worktop extractor canopies. At 66 kg, the unit is moved with a trolley or two-person lift and remains stable during vigorous stirring or frying.
Cleaning involves wiping the ceramic glass surface with a damp cloth after each service, removing the front panel to clean behind it, and rinsing the control knobs under running water. The stainless steel worktop and legs are scrubbed with non-abrasive pads to maintain the satin finish.
The PCIT-78ET is part of the Lotus 70 series, designed for modular assembly in professional catering kitchens.
