Professional glass-ceramic induction hob with 2 independent cooking zones. Made of high-quality AISI 304 stainless steel, suitable for intensive use in professional kitchens.
An induction cooking top heats only the pan, not the surface. A coil beneath the ceramic glass generates a magnetic field that induces currents in cookware with a magnetic base. These currents produce heat directly in the pan, so the hob stays cool to the touch and energy is not wasted heating the air. The process is instant, precise and responsive to changes in power setting, making it suitable for high-demand cooking tasks such as searing, boiling, sautéing and shallow frying.
The PCIT-74ET has two independent cooking zones, each controlled by its own set of dials. The operator places a pan on one or both zones, selects the power level, and the hob adjusts the magnetic field to maintain the chosen output. A pan that is too small or not magnetic will not activate the zone, preventing accidental operation. When cooking is complete, the hob switches off automatically if the pan is removed, and the surface remains cool enough to wipe down immediately.
The unit is built on a stainless steel frame in grade 18/10 (AISI 304), with a 2 mm thick worktop finished in Scotch-Brite satin. Edges are rounded and details chromed for durability and ease of cleaning. A removable front panel gives access to the interior for maintenance. Water-resistant control knobs rated IPX5 allow safe operation in wet environments, and adjustable stainless steel legs ensure a stable, level installation. The frame is designed to interlock with other Lotus 70 series equipment for modular kitchen layouts.
A 10 kW power rating requires a 400 V three-phase supply, the standard for professional catering circuits. The 34 kg weight indicates a robust construction that can be moved with a trolley but is intended for permanent installation. The footprint of 400 x 705 mm fits a standard worktop depth, leaving space for adjacent appliances or preparation areas. The ceramic glass surface measures 35 x 57 cm, providing two zones large enough for professional-grade pans.
Cleaning is straightforward: the ceramic glass can be wiped with a damp cloth once cool, and the stainless steel surfaces resist staining and corrosion. The removable front panel allows access to internal components for periodic inspection and cleaning. The Scotch-Brite finish hides minor scratches and reduces visible fingerprints, maintaining a professional appearance under heavy use.
The PCIT-74ET is part of the Lotus 70 series, designed for modular integration with other units in the same range. It is classified as a professional induction cooking top for commercial kitchens.
