Professional electric fry top with a ribbed cooking surface, designed for grilling meat, fish, vegetables and other foods. The durable AISI 304 stainless steel construction ensures long service life, even heat distribution and easy daily cleaning.
A ribbed fry top creates seared, char-lined food by direct conduction from a heated metal plate. The ridges concentrate heat and leave grill marks, while the valleys allow fat to drain away, reducing flare-ups and keeping food crisp. Electric elements beneath the plate convert energy into radiant heat, which the thick steel surface spreads evenly across both cooking zones. This method gives consistent browning without hot spots, essential for batch cooking in a professional kitchen.
The operator sets the desired temperature on the control knobs, which regulate the elements independently for each zone. Once the plate reaches the set point, the thermostats cycle the power to maintain it. Food is placed directly on the ribbed surface; the ridges sear the contact points while the surrounding heat cooks the rest. A removable grease tray beneath the front edge collects fat and juices as they drain, preventing smoke and simplifying cleaning.
The fry top is built from 2.5 mm 18/10 AISI 304 stainless steel, chosen for its resistance to corrosion and thermal stress. The working surface has a Scotch-Brite satin finish, which diffuses heat evenly and resists scratching from metal utensils. Adjustable legs allow the unit to be levelled on uneven floors, and a locking mechanism secures it in place during service.
Controls consist of two temperature dials, one for each cooking zone, with a range from 50 to 300 °C. A dual thermostat system provides both operational control and safety overheat protection. Water-resistant IPX5-rated control knobs prevent moisture ingress during cleaning.
The 14.8 kW power rating requires a 400 V three-phase, five-wire supply, typical of commercial kitchen circuits. At 103 kg, the unit is moved with a trolley or pallet jack, not carried by hand. The 1200 x 705 mm footprint fits standard worktop depths and allows side-by-side installation with other modular equipment.
Daily maintenance involves scraping the plate while still warm, emptying and washing the grease tray, and wiping down the stainless steel surfaces with a damp cloth. The satin finish does not require polishing, and the removable tray eliminates the need for deep cleaning of internal cavities.
The FTRT-712ET is a ribbed variant of the smooth fry top range, offering the same dual-zone layout and power but with a ridged cooking surface for grill-marked results. It is classified under professional catering equipment, specifically electric griddles and fry tops.
