Electric Grill Surfaces are professional flat heating surfaces (plancha) designed for professional kitchens in restaurants, hotels, fast-casual establishments and other foodservice businesses, where cooking on a flat, evenly heated surface without an open flame is required. Electric grill surfaces use direct-contact heat conduction—the product is placed directly on the hot metal surface, ensuring even browning, the Maillard reaction and a crispy crust without greasy flare-ups. Two types of grill surface are available: smooth surface (suitable for cooking eggs, pancakes, French toast and delicate products) and ribbed surface (with grooves for a grill effect—ideal for steaks, vegetables and meat products). BHS offers electric grill surfaces alongside a wide Grills range.
BHS specialists help you choose the most suitable electric grill surface model for your specific kitchen. See also Gas Grill Surface and Contact Grills.
Electric Grill Surfaces are versatile kitchen equipment that has become an essential part of professional restaurant and fast-casual kitchen equipment. Unlike a contact grill, an electric grill surface is open at the top, allowing you to cook larger portions, use spatulas and visually monitor the cooking process. The right temperature and surface type are key factors in achieving optimal results.
Types of electric grill surface
Electric grill surfaces are available in several configurations. Smooth surface—a completely flat metal platform; suitable for frying eggs, pancakes, toast, crespelle and delicate products. Ribbed surface—diagonally grooved channels; creates a visual grill-stripe effect; suitable for frying steaks, poultry, meat products and vegetables. Combination surface—half smooth, half ribbed in one unit; more flexible use in a single kitchen. Compact countertop unit—400 mm width model for a small café or buffet. Full-width unit—600, 700 or 800 mm width model for a professional restaurant kitchen. See also Gas Grill Surface.
Technical parameters
Electric grill surface parameters should be chosen according to kitchen volume. Power—2–8 kW depending on surface width; higher power = faster heating and greater throughput. Surface material—stainless steel or cast iron; cast iron retains heat better but is heavier and heats up more slowly. Temperature control—thermostat control up to +300°C; some models with zonal temperature control. Grease drainage—front or side grease collection channel with a separate container. Splash guard—protection against high heat and grease splashes. See also Lava Grills.
Smooth vs. ribbed surface
The type of grill surface should be chosen according to the planned menu. Smooth surface—better heat transfer through direct contact; more suitable for delicate products; easier to clean; less grease buildup. Ribbed surface—decorative grill-stripe effect on steaks and meat surfaces; better grease drainage from the product; slightly more difficult to clean. Combination surface—an attractive multi-functional solution; suitable for kitchens with an extensive menu. Meat and fish—ribbed surface is often preferred for grill marks; steaks, chicken fillets. Eggs and pancakes—a smooth surface is essential; ribbed surface is unsuitable for these products. BHS advises on surface type selection.
Cleaning and maintenance
Regular cleaning of electric grill surfaces ensures hygiene and extends service life. Hot cleaning—clean the grill surface immediately after use while it is still warm; melts grease deposits. Scraper and steam—a special grill surface scraper removes grease and food residue; steam cleaning for deeper decontamination. Oiling—after cleaning, apply a small amount of cooking oil to the surface; prevents corrosion and product sticking. Cast iron surface seasoning—cast iron grill surfaces require regular seasoning; a layer of oily fat on the heated surface. BHS advises on grill surface maintenance.
HoReCa usage scenarios
A restaurant with an extensive menu—a combination electric grill surface with smooth and ribbed zones for simultaneous cooking of steaks, vegetables and breakfast eggs. Fast-casual establishment—an electric grill surface for burgers, hot sandwiches and homemade pancakes; constant high temperature during shifts. Hotel breakfast area—a smooth electric grill surface for omelettes, waffles and toast at breakfast.
