An electric fry top heats a solid metal plate with embedded elements, transferring energy directly to the food. The smooth surface gives even contact for items like eggs, pancakes or thin cuts of meat, while the optional ribbed side concentrates heat into searing lines for steaks and vegetables. A thermostat cycles the elements to hold the chosen temperature across the entire plate, eliminating cold spots that slow service during peak hours.

The operator switches the unit on, sets the temperature between 50 °C and 300 °C, and allows the plate to reach the working range. Food is placed directly on the smooth griddle; a scraper or spatula turns and removes it once cooked. A removable grease tray collects drippings beneath the front edge, reducing flare-ups and simplifying end-of-shift cleaning. Adjustable legs level the unit on uneven floors, and a locking mechanism secures the position once set.

The griddle plate measures 76 cm by 51 cm and is made of 2.5 mm 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish. Daily cleaning involves scraping the plate, emptying the grease tray and wiping the controls with a damp cloth. The satin finish reduces visible scratches, extending the plate's service life. Adjustable legs are checked periodically to ensure the unit remains level and stable.
