A grinding disk determines the texture of minced meat, vegetables or other ingredients in a commercial meat grinder. The disk sits between the feed screw and the knife, forcing food through its precisely sized holes. Smaller holes produce a finer mince, while larger ones yield a coarser chop. The disk's thickness and the sharpness of its edges control how cleanly the food is cut rather than crushed, reducing waste and preserving texture.
To use the Disk Z7, the operator first switches off and unplugs the grinder. The existing disk is removed by unscrewing the retaining ring, and the knife is lifted clear. The Z7 disk is placed onto the shaft, ensuring its flat side faces the knife. The knife is repositioned, the retaining ring is tightened, and the grinder is reassembled. Once the machine is restarted, food is fed through the hopper, and the rotating screw pushes it against the disk, forcing it through the 7 mm holes.
The Disk Z7 is made of stainless steel, chosen for its resistance to corrosion and wear in a wet, acidic kitchen environment. The 7 mm hole size is a standardised setting that balances throughput with texture, allowing the grinder to produce a medium-coarse mince suitable for burgers, sausages or stuffing without overworking the motor.
This disk fits FIMAR professional meat grinders and is compatible with other commercial grinders that accept the same shaft diameter and retaining-ring thread. It is listed in the spare-parts section of the FIMAR catalogue under grinding accessories.
