A pastry mould shapes dough into uniform portions by pressing it between two patterned plates. The twin-impact design of the FIMAR TSA02 creates two identical pastries in a single press, doubling output without extra handling. The rigid plates ensure even thickness and crisp edges, which bake at the same rate and finish together.
The operator places a sheet of dough on the lower plate, closes the mould, and applies steady pressure. When the plates separate, two shaped pastries lift away cleanly, ready for proofing or immediate baking. The process repeats without reloading the mould, so batches remain consistent throughout service.
The mould is constructed from stainless steel, chosen for its resistance to corrosion and ease of cleaning after contact with acidic or buttery doughs. The 180 by 280 mm impressions suit standard bakery trays and conveyor widths, allowing seamless integration into production lines.
Cleaning follows each use: the plates are wiped with a damp cloth to remove dough residue, then dried to prevent water spots. No disassembly is required, so the mould remains ready for the next batch.
The TSA02 is classified as a TS3 A mould, indicating compatibility with FIMAR TS3 series presses and similar manual or semi-automatic stamping equipment used in commercial bakeries.
