A cutter plate determines the size and shape of minced, sliced or diced food in a professional food processor. The disk sits between the feed tube and the rotating blade; as the operator pushes ingredients down, the blade shears them against the sharp holes in the plate.
The sequence is straightforward: the operator selects the disk, locks it into the processor's hub, secures the lid, and starts the motor. Ingredients are fed through the tube while the motor runs; the plate's holes guide the food into the path of the spinning blade, which cuts each piece cleanly against the edge of the hole. The result is consistent texture without crushing or tearing, a requirement for professional charcuterie and garde-manger work.
Constructed from hardened stainless steel, the Disk H4 resists corrosion and maintains its sharp cutting edges through repeated use. The 4 mm hole size is standardised for tasks that call for small but distinct pieces, such as mirepoix, sausage meat or finely diced root vegetables.
Cleaning follows from the construction: after each use the disk is removed, rinsed under hot water to clear food debris, and scrubbed with a non-abrasive brush. Stainless steel tolerates both manual washing and commercial dishwasher cycles, provided the detergent is low-chloride to prevent pitting. The disk should be dried immediately to prevent water spots and stored in a dry cupboard to preserve its edge.
The Disk H4 fits FIMAR food processors that accept interchangeable cutter plates, allowing a single machine to switch between coarse, medium and fine settings by swapping disks.
