An upright freezer maintains food at temperatures below the freezing point of water by circulating refrigerant through a sealed system. The refrigerant absorbs heat from the cabinet and releases it outside, keeping the interior cold. This method allows rapid freezing and consistent storage without dehydration, preserving texture and flavour in professional kitchens.

The operator loads food onto the fixed freezing shelves, closes the reversible solid door, and sets the electronic thermostat to the desired temperature between -24 and -10 °C. The unit starts automatically, maintaining the set temperature without further adjustment. Adjustable feet ensure the cabinet stands level on uneven floors, preventing door misalignment.
