A refrigerated display cabinet keeps chilled food visible and accessible while maintaining a steady low temperature. A compressor circulates refrigerant through an evaporator coil inside the cabinet; the coil absorbs heat from the air, lowering its temperature. A fan then pushes the cold air evenly across the shelves, ensuring every tray stays within the set range. This forced-air system prevents warm spots and keeps the contents fresh without freezing them.

The operator loads GN 2/1 gastronorm trays onto the three removable epoxy-coated shelves. The electronic control panel is set to the desired temperature between 0 and 8 °C; the digital display confirms the setting. Once powered on, the unit cools automatically, using an electric defrost cycle to clear ice from the evaporator without manual intervention. The door is opened only when necessary, and the automatic closing mechanism reduces cold-air loss each time.

The cabinet is built from AISI 304 stainless steel inside and out, with rounded internal corners to minimise dirt traps. A 80 mm layer of high-density polyurethane insulation surrounds the chamber, cutting heat transfer and stabilising the internal temperature. The double-glazed door has an electric anti-condensation heater in the frame to keep the glass clear, and an ergonomic handle for easy opening. Adjustable stainless-steel legs allow the unit to be levelled on uneven floors.

The controls include a digital display for temperature, an ECO mode to reduce energy use during quieter periods, and a HACCP logging system that records up to ten alarm events such as power cuts or temperature deviations. The shelves can be repositioned at 55 mm intervals across 24 possible levels, allowing the cabinet to be reconfigured for different tray heights.

A 610 L volume provides space for multiple GN 2/1 trays, while a 693 mm width and 856 mm depth fit standard worktop layouts. The 152 kg weight requires two people to move the unit safely, and the 220–240 V single-phase supply matches the standard circuit found in professional kitchens. The B energy-efficiency rating reflects a balance between cooling performance and electricity consumption, and the R600a/R290 refrigerant blend is chosen for its low environmental impact.

Cleaning involves removing the shelves and wiping down the stainless-steel interior with a damp cloth; the rounded corners and integrated drainage channel simplify the process. The epoxy coating on the shelves resists corrosion and can be cleaned with mild detergent. The refrigerant circuit is sealed and requires no routine maintenance beyond occasional checks for leaks.
