Carving station specially designed for holding, displaying, carving and serving warm food such as roast beef, ham, turkey breast, etc. in show-cooking areas. The unit helps maintain food at the optimal temperature throughout service. The unit is designed for installation into a worktop.
A drop-in carving and holding station keeps cooked joints warm, moist and ready for service without drying or discolouration. The unit combines a heated water bath below and an infrared ceramic lamp above. The water bath circulates gentle, even heat through the bain-marie, while the adjustable lamp concentrates radiant warmth on the meat's surface. Together they maintain serving temperature, texture and appearance for extended carving sessions.
The operator lowers a GN1/1 gastronorm tray of sliced or whole joints into the perforated stainless-steel base. The digital thermostat is set between +30 °C and +90 °C; both heating systems start simultaneously. A water-level sensor monitors the bain-marie and tops it up automatically via a ½" ball valve. The infrared lamp is mounted on a movable arm, allowing the chef to angle it over different cuts or reposition it for cleaning.
The entire unit is built from brushed stainless steel. The bain-marie has rounded internal corners and a dedicated drainage zone for quick, hygienic cleaning. Indirect silicone heating elements beneath the bath heat the water evenly and reach operating temperature rapidly. The control panel is recessed within the frame to avoid accidental knocks and is connected by a 1 m cable so it can be mounted separately under the worktop.
A power rating of 1.3 kW indicates a single-phase 230 V circuit, standard for most professional kitchens. The footprint of 515 mm wide by 610 mm deep fits a standard drop-in aperture, while the 1005 mm height allows the lamp to clear the work surface. At 49 kg the unit is light enough to be manoeuvred by two people during installation but stable once in place. The 13 mm overhanging rim seals the cut-out and creates a seamless finish.
Cleaning involves draining the bain-marie, wiping the perforated tray and base, and rinsing the rounded corners. The infrared lamp and its ceramic elements are removed for separate cleaning. The digital thermostat and automatic water-fill system reduce manual checks, while the recessed control panel stays clear of spills.
The TRCBMAA6-1 is a drop-in model designed for integration into a worktop or counter. It is listed in the Fagor carving and holding section of the professional catering catalogue.
