Professional set for making pizza. Includes 7 items.
A commercial pizza kit gathers the essential tools for transferring, shaping and finishing pizzas without lifting the dough from the worktop. The perforated aluminium spatula slides under the base, the holes letting air escape so the pizza does not stick or tear. A second, smaller peel handles individual slices or small pizzette, while the brass-bristle brush sweeps flour and ash from the oven floor without scratching the refractory surface.
To use the kit, the operator first loads the large spatula with a stretched dough disc, slides it into the oven and gives a quick jerk to deposit the pizza on the stone. The same motion retrieves the cooked pizza. The small peel lifts individual slices or rotates pizzas mid-bake. The dough-cutter roll trims excess dough from the edges of the tray, the triangular scraper cleans the worktop and the tomato ladle portions sauce evenly across the base.
The kit is built in the Gi.Metal Azzurra line: the 33 × 33 cm rectangular spatula is made of anodised aluminium, the small peel is the same material with a 20 cm diameter, and the wall rack holds three peels vertically to save space. The dough-cutter roll and triangular scraper are stainless steel, the brush has brass bristles, and the tomato ladle holds 170 g.
Each tool is sized for professional use: the 33 cm peel matches standard pizza bases, the 120 cm handle keeps the operator clear of the oven mouth, and the brass bristles withstand the heat of a wood-fired or deck oven. The anodised finish resists corrosion and makes the peels easier to slide under dough.
Cleaning follows from the materials: wash the aluminium peels and stainless-steel tools in warm water with mild detergent, rinse and dry immediately to prevent water spots. The brass brush can be tapped to remove flour and ash, then wiped with a damp cloth. The wall rack is wiped down with a damp cloth and left to air-dry.
The kit is supplied as a single article, PRO32F/120, and is listed in the Gi.Metal catalogue under pizza preparation and handling.
