A strainer disc for a meat grinder separates lean mince from connective tissue and sinew by forcing the meat through a perforated plate. The grinder's auger pushes the meat against the disc; only particles smaller than the holes pass through, while tough fibres and gristle are left behind and ejected separately. This produces a consistent, coarse texture without manual trimming, saving time in butchery and sausage preparation.
To use the strainer, the operator removes the standard grinding plate from the grinder head, fits the 6 mm mesh disc in its place, and secures it with the retaining ring. The grinder is then run as usual: meat is fed into the hopper, the auger conveys it to the disc, and two streams emerge—one of clean mince, the other of waste. The process continues until the batch is finished or the waste chute needs clearing.
The disc is a single piece of hardened stainless steel with laser-cut perforations. It fits Stalgast 7211-series meat grinders and is compatible with any machine that accepts the same plate diameter and mounting system.
Cleaning follows the same routine as for any grinder plate: remove the disc after use, scrub with a stiff brush under hot water to dislodge trapped fibres, and sanitise before storage. Regular cleaning prevents cross-contamination and keeps the perforations clear for consistent throughput.
