A meat grinder strainer determines the texture of minced meat by forcing it through a perforated plate. The 4.5 mm mesh creates medium-coarse mince suitable for burgers, meatballs and sausages where a visible grain is wanted without excessive chewiness.
The strainer fits into the grinder head behind the worm auger. Meat is pushed forward by the rotating auger, compressed against the strainer, and extruded through the holes. Larger particles that cannot pass are left behind, ensuring consistent particle size and removing gristle or sinew that would spoil the mouthfeel.
To use, disassemble the grinder head, remove the existing strainer, and insert the 721013 plate so the mesh side faces the auger. Reassemble the head, secure it, and run the grinder. The strainer remains stationary while the auger turns, so no additional locking is needed beyond the standard grinder assembly.
Constructed from hardened stainless steel, the strainer resists wear from bone fragments and acidic meat juices. The 4.5 mm holes are laser-cut for uniformity, preventing uneven extrusion that can lead to hot spots during cooking.
Cleaning follows the grinder's routine: remove the strainer after use, scrub with a stiff brush under hot water, and sanitise before storage. Avoid abrasive pads that can enlarge the holes and alter the grind size over time.
This is a direct replacement for Stalgast 7211 line meat grinders. No other specifications or variants are supplied for this article.
