Equipped with a water supply tap
Water drainage to floor drain
Suitable for GN 2/1 containers, depth 150 mm
A gas heated bain-marie keeps prepared dishes at serving temperature without drying or scorching. The unit circulates hot water in a sealed vat beneath the food containers, transferring gentle, even heat through the base of each gastronorm pan. This indirect method prevents direct flame contact, so sauces, soups and delicate items stay moist and at a consistent temperature for hours. The water bath also acts as a thermal buffer, smoothing out fluctuations when the lid is opened or new pans are added.
To operate the bain-marie, fill the vat with water through the built-in tap until the level reaches the indicator. Place GN2/1 pans of food on the perforated stainless steel rack. Ignite the burner with the piezo spark button; the pilot flame lights the main burner, which is controlled by a thermostatic valve. Adjust the valve to the desired temperature and the system maintains it automatically. A thermocouple safety device cuts the gas supply if the pilot flame goes out. Exhaust gases are vented through a rear duct, keeping the kitchen atmosphere clear. When service is finished, open the floor-level drain tap to empty the vat quickly.
The bain-marie is built entirely from 18/10 AISI 304 stainless steel, finished in a Scotch-Brite satin polish. The 2 mm thick worktop has rounded edges and chrome-plated details for durability and hygiene. An open stainless steel shelf beneath the vat provides storage for additional utensils. Waterproof IPX5-rated control knobs are mounted on a rear protective panel. Adjustable feet ensure stable placement on uneven floors, and a conversion kit for LPG or natural gas is included.
The 6.5 kW power rating indicates the load on the gas supply; this unit requires a dedicated commercial gas line. The GN2/1 capacity allows two full-size gastronorm pans side by side, each 150 mm deep, giving a total footprint of 800 by 705 mm on the worktop. At 68 kg, the bain-marie is moved with a trolley but remains stable once positioned. The 900 mm height places the work surface at standard worktop level, matching adjacent equipment.
Cleaning is straightforward: remove the front control panel to access all internal parts. The stainless steel vat, rack and shelf wipe clean with a damp cloth; the rounded edges and satin finish prevent food debris from sticking. The drain tap allows complete water removal, preventing scale build-up. Regularly check the pilot flame and thermocouple for correct operation, and inspect the gas hose and connections for leaks.
The model BM-78G is the gas-heated version of the LOTUS bain-marie line, designed for kitchens without electrical power or where gas is the preferred energy source. It is listed in the catalogue under professional catering equipment, gas appliances, holding and display units.
