Electric bain-marie with an integrated water inlet tap. Suitable for 2 × GN 1/1 and 2 × GN 1/3 containers up to 150 mm deep (2 × GN 1/1 + 2 × GN 1/3, H 150 mm).
A bain-marie keeps prepared dishes at serving temperature without drying or overcooking by surrounding gastronorm pans with gently circulating hot water. The water bath transfers heat evenly around every surface, protecting delicate sauces and proteins from direct heat while maintaining moisture. This method prevents hot spots and allows precise temperature control across the entire well, making it essential for holding sauces, soups, custards and other items that must stay at a consistent warmth until service begins.
The BM-98ET is loaded from the top with two full-size GN1/1 pans and two smaller GN1/3 pans, each up to 150 mm deep. The operator fills the built-in water reservoir through the rear tap, then sets the thermostatic control to the required holding temperature. Once the water reaches the set point, the unit maintains it automatically, circulating warmth around the pans. A drain valve at the base connects to a floor gulley, allowing quick emptying after service without lifting the unit.
The construction is 18/10 AISI 304 stainless steel throughout, with a 2 mm thick satin-finish worktop, rounded edges and chrome-plated trim. The rear splash guard and IPX5-rated waterproof control handles protect the electrical components from splashes and hose-down cleaning. An open cupboard beneath the well provides storage for kitchen tools and accessories, while the pressed, rounded-corner water bath simplifies cleaning and ensures high hygiene standards.
Controls consist of a thermostatic dial for temperature setting and a power switch. The 5.7 kW power rating indicates the load on the three-phase supply, suitable for a dedicated commercial circuit. The 400 V three-phase voltage is standard for professional kitchens, allowing higher power delivery without overloading single-phase circuits. The 76 kg weight requires two people to move the unit safely, and the adjustable legs provide stable positioning on uneven floors.
Cleaning involves draining the water bath, wiping down the stainless steel surfaces with a non-abrasive cloth, and rinsing the well. The front control panel removes easily for access to internal components, and the open cupboard can be cleared and sanitised. The unit is supplied with one end closure panel (TPA-9) for installation flexibility.
The BM-98ET is categorised under professional electric bain-maries for three-phase power supply.
