Electric bain-marie with an integrated water inlet tap. Suitable for GN 1/1 and GN 1/3 containers up to 150 mm deep (GN 1/1 + GN 1/3, H 150 mm).
A bain marie holds prepared dishes at serving temperature without drying or overcooking them. A heated water bath surrounds gastronorm containers, transferring gentle, even heat through the water to the food. The water conducts heat more uniformly than air, preventing hot spots and keeping sauces, soups and sides ready for plating throughout service. Because the food never touches the water, flavours stay separate and textures remain stable, even over long holding periods. To use the BM-94EM, fill the pressed stainless-steel vat with water to the marked level. Connect the integrated water tap to a supply and the drainage outlet to a floor gulley. Slide gastronorm pans—GN 1/1 or GN 1/3 up to 150 mm deep—into the water bath. Set the thermostatic control to the required holding temperature and switch on. The 2.85 kW element heats the water, which circulates naturally around the pans, maintaining the set point. An open cupboard beneath the vat stores serving utensils, ladles or spare pans within reach. Adjustable legs level the unit on uneven floors, ensuring stability during service. The unit measures 400 mm front to back, 900 mm across and 900 mm high, fitting into a standard worktop run or against a wall. At 52 kg it is light enough to move with a trolley but heavy enough to stay steady when loaded. The 230 V single-phase supply matches the circuit used by most professional kitchen equipment, so no special wiring is needed. The IPX5-rated waterproof control handles allow safe wipe-downs between services. Construction is 18/10 AISI 304 stainless steel throughout, with a Scotch-Brite satin finish on the worktop and rounded edges for safety and hygiene. A pressed vat with radiused corners prevents food debris collecting and speeds cleaning. The rear protective panel and chrome details resist corrosion in humid kitchen environments. Removing the front control panel gives access to all internal parts for maintenance. A single end cap (TPA-9) is supplied to close the open side if the unit is installed at the end of a run. Stainless steel surfaces with rounded corners and a pressed tank let you wipe away grease and residue without scrubbing crevices. After service, drain the water, remove the pans and wipe the vat with a damp cloth. The rounded corners and smooth welds prevent grease or scale building up. The control panel and tap can be cleaned with a damp cloth and mild detergent; the IPX5 rating protects the electronics from water ingress. The open cupboard beneath is wiped down and left to dry before the next use.
