Professional gas griddle with a 1/3 ribbed and 2/3 smooth cooking surface and an open neutral cabinet, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction ensures even heat distribution, a long service life, and easy daily maintenance.
A gas fry-top heats a solid metal plate with burners underneath, spreading heat evenly across the surface for searing, grilling and shallow frying. The ribbed third of the plate concentrates heat into ridges, marking food with char lines while allowing fat to drain away. The smooth sections give a flat contact surface for delicate items like eggs or pancakes. A fry-top runs hotter than a standard hob, reaching temperatures that brown and crisp quickly without steaming the food inside.
The operator lights the pilot with a piezoelectric spark, then sets the thermostat for each of the three cooking zones. The left and centre zones share the ribbed section; the right zone is smooth. Once the plate reaches the chosen temperature, the thermocouple holds it steady, compensating for the load of cold food. A rear flue draws combustion gases away, keeping the kitchen air clear. Below the plate, a deep, removable grease tray collects drips and spills, ready to be emptied and wiped clean.
The 116 cm by 51 cm cooking surface is made of 2 mm thick 18/10 AISI 304 stainless steel with satin Scotch-Brite finish and rounded edges. Chromed trim and a rear splash guard protect the surrounding worktop. Water-resistant IPX5 control knobs sit on the front panel, which lifts off for access to the gas valves and thermostats. A conversion kit for alternative gas types is included, along with a single end panel (TPA-9) to close the side when the unit stands alone.
The 21 kW power rating means the fry-top needs a dedicated commercial gas line and a flue connection. The 1200 mm width and 705 mm depth set the footprint on the worktop; the 900 mm height allows it to sit under standard extractor canopies. The 154 kg weight requires two people to move and level the unit on its adjustable feet. The open cabinet beneath provides storage for pans, trays and kitchen tools without doors or shelves.
Cleaning starts with the grease tray: remove, empty and wash it daily. The front control panel lifts off to expose the gas valves and thermostats for wipe-down. The stainless steel plate is scraped while still warm, then wiped with a damp cloth and a mild detergent. The satin finish hides minor scratches, but abrasive pads are avoided to preserve the surface. The rear flue should be checked monthly for blockages, and the thermocouple sensor kept free of grease to maintain accurate temperature control.
The FTLR-712G3 is a single model; no variants are listed for this article. It is placed in the LOTUS catalogue under gas fry-tops with open storage cabinets.
