A gas convection oven circulates hot air around the cavity with a fan, ensuring even cooking without cold spots. The fan speed can be adjusted, allowing the operator to control how aggressively the heat is distributed—gentler for delicate items like pastries, stronger for roasting meats. The gas burner generates the heat, while the fan spreads it, reducing cooking times compared to static ovens and improving consistency across multiple trays.
The STG 72 V7 is loaded through a folding glass door that seals the cavity during operation. Trays of food are slid onto runners spaced 67 mm apart, allowing up to seven full-size gastronorm GN2/1 trays or fourteen half-size GN1/1 trays to be cooked simultaneously. The operator selects a programme from the touchscreen, which offers preheating, cooking, cooling, regeneration, fermentation, and holding modes. Climate and steam controls adjust humidity within the cavity, preventing drying or sogginess, while the multicooker function enables braising, steaming, or slow cooking in a single appliance. A USB port allows recipes to be saved or updated, and the editable recipe book stores frequently used settings for quick recall.
Operation begins with preheating, monitored by the oven's safety thermostat. Once the set temperature is reached, the trays are loaded, and the programme starts. The fan circulates air at one of ten speeds, while the climate control maintains the desired humidity. An end-of-cycle alarm sounds when cooking is complete, and the microphone on the door allows the operator to listen for sizzling or other cues without opening it. The reverse function alternates the direction of airflow to ensure even browning, and the multipoint probe with delta T monitoring tracks temperature differences between the food and the cavity, adjusting as needed. For extended service, the oven can hold food at a set temperature until serving.
The oven is constructed with a stainless steel exterior and interior, designed for durability in high-volume kitchens. The folding glass door reduces the footprint when open, and the LED interior light illuminates the cavity without adding heat. A 3/4” water connection supplies steam for climate control, and the self-cleaning function simplifies maintenance by circulating hot water and detergent through the cavity. The touchscreen interface displays all settings, including fan speed, temperature, and time, with a scheduling mode for delayed starts.
The 20 kW gas burner provides the primary heat source, while the 0.2 kW electrical power supports the fan, controls, and interior light. The 230 V voltage requirement means the oven connects to a standard single-phase circuit, though the gas supply must be separately installed. At 145 kg, the unit is floor-standing and requires a stable worktop or stand, while its 790 x 1220 x 840 mm dimensions fit into most professional kitchen layouts without obstructing workflow. The 67 mm spacing between trays allows for bulk cooking, and the 300 °C maximum temperature supports baking, roasting, and grilling.
Cleaning involves running the self-cleaning cycle, which heats water and detergent to loosen grease and residue. The interior surfaces can then be wiped down, while the exterior is cleaned with a damp cloth. The folding glass door should be checked for seals to maintain efficiency, and the water connection should be inspected periodically for leaks. The touchscreen and controls require no special maintenance beyond regular wiping with a soft, dry cloth.
The STG 72 V7 is categorised as a gas convection oven in the FM Industrial professional range, designed for commercial kitchens requiring precise temperature and humidity control across multiple trays.
