Professional electric bain-marie with a deep tank, thermostat control, and a durable AISI 304 stainless steel construction, designed to keep food at serving temperature.
2xGN1/1 + 2xGN1/3, H-150 mm
A bain marie keeps prepared dishes at serving temperature without drying or overcooking. It circulates warm water around gastronorm containers, transferring heat gently and evenly to the food inside. The water bath prevents direct contact with the heating element, so sauces stay smooth, vegetables retain moisture and proteins do not toughen. This method is standard for holding soups, stews, sauces and delicate items that must stay ready for service over long periods.
The operator loads the two full-size GN1/1 and two third-size GN1/3 containers into the heated well, fills the bain marie with water to the marked level, and sets the thermostat to the required holding temperature. Once the water reaches the set point, the appliance maintains it automatically, allowing staff to focus on plating and service. The deep well and rounded edges make it easy to slide containers in and out without spilling.
The unit is built from 18/10 AISI 304 stainless steel, satin-finished with Scotch-Brite for a durable, non-reflective surface. The worktop is 1 mm thick, with rounded edges and chrome-plated details for safety and ease of cleaning. IPX5-rated waterproof handles protect the controls from splashes, and the front drain allows quick water changes without lifting the appliance. Adjustable legs ensure a stable setup on uneven galley floors, while the integrated fixing system secures the bain marie during rough seas.
A 5.7 kW power rating means the appliance draws a steady load suitable for a three-phase 400 V circuit, common in commercial kitchens and marine galleys. The 54 kg weight indicates a sturdy, fixed installation rather than a portable unit, and the 800 mm width fits standard worktop depths while leaving space for adjacent equipment. The 280 mm height keeps the water level low enough for safe handling of hot containers.
Cleaning involves draining the water, wiping down the stainless steel surfaces with a damp cloth and mild detergent, and rinsing the well to remove food debris. The satin finish resists fingerprints and scratches, and the rounded edges prevent dirt from collecting in corners. Regular descaling of the heating element ensures consistent performance.
The BMT-98ETX is designed for marine environments, with corrosion-resistant materials and splash-proof controls that withstand high humidity and salt air. It is a single-phase model within the Lotus bain marie range, configured for professional holding and service in galleys and catering operations.
