A confectioner's fryer heats a deep bath of oil with electric elements, transferring heat evenly through the oil to cook doughnuts, churros, fritters and other sweets without cold spots. The oil's high heat capacity and rapid circulation fry the exterior quickly, sealing in moisture while the centre cooks through. A basket lowers the product into the oil and lifts it out when done, keeping the operator clear of splashes and allowing consistent batch times.
The operator fills the 17-litre tank with oil, sets the operating thermostat to the required temperature, and switches the fryer on. Once the oil reaches the set point, the basket is loaded with product and lowered into the oil. A lift-up rest holds the basket clear of the oil when not in use, and a lid reduces heat loss and splatter. The overheat safety thermostat cuts power if the oil temperature rises beyond safe limits. When frying is complete, the basket is raised, the product drained, and the oil can be drained through the front valve for cleaning or replacement.
The fryer is fabricated from CrNi 18/10 AISI 304 grade stainless steel with a Scotch-Brite satin polish finish. The 1 mm thick worktop has rounded edges, chromed details and a rear splashback. Sheathed elements sit inside the tank, and the resistance box can be removed for thorough cleaning. Adjustable feet allow the unit to be levelled on uneven floors.
The 6.6 kW power rating requires a three-phase 400 V supply with neutral or a 230 V three-phase connection, drawing a load typical of professional catering equipment. The 60 kg weight means the fryer is moved with a trolley or two people, while the 600 × 700 × 850 mm footprint fits on a standard worktop or mobile stand.
Cleaning involves draining the oil, removing the basket and lids, lifting out the resistance box, and washing all stainless steel surfaces. The front drain valve simplifies oil changes, and the rounded edges and satin finish reduce areas where residue can collect.
The fryer is supplied with a basket and lids, and the catalogue places it in the professional confectionery section for bakeries, patisseries and catering kitchens.
