Professional electric fryer made of AISI 304 stainless steel, designed for intensive use in professional kitchens. Equipped with safety systems, a drain tap and an easy-to-clean construction.
This three-phase electric fryer features two separate oil vats, each with its own thermostat for independent temperature control. Heat is generated beneath the oil, warming it to the desired level. Natural oil circulation ensures even cooking, while dual baskets enable simultaneous frying of different foods without flavour mixing. A secondary safety thermostat automatically disconnects power if the oil overheats, reducing fire risk and equipment damage.
Each 8-litre vat is filled with oil before use. Baskets are lowered into cold oil to verify fit before switching on the fryer. Once powered, thermostats are adjusted to the required cooking temperature. Food is placed in the baskets, submerged in hot oil, and timed manually. After cooking, baskets are lifted, drained, and contents transferred to a holding area. A tap at the base of each vat allows oil drainage for filtering or replacement without tilting the unit.
Constructed from 18/10 AISI 304 stainless steel, the fryer resists corrosion in high-moisture environments. The exterior has a 1 mm brushed Scotch-Brite finish, concealing fingerprints and minor scratches. Rounded edges enhance safety, while chrome-plated details protect high-wear areas. Handles are IPX5-rated, withstanding low-pressure water jets from any direction, essential for daily kitchen cleaning. Adjustable legs with a locking mechanism ensure stability on uneven floors.
Controls include two thermostats, one per vat, regulating oil temperature. A non-adjustable safety thermostat activates if the primary thermostat fails. The fryer operates on a three-phase 400/440 V supply at 50/60 Hz, requiring 12 kW. This power level demands a dedicated commercial circuit with proper wiring and protection, unavailable in most domestic settings.
The 8+8-litre capacity indicates usable oil volume per vat, not food load. Each basket measures 12 cm by 29 cm by 11.5 cm high, determining the maximum fryable item size. The fryer occupies 400 mm in depth and 900 mm in width, fitting standard worktop spaces but requiring ventilation and operator clearance. Weighing 58 kg, it requires a trolley or two-person lift for movement, with adjustable legs set once positioned.
Cleaning involves draining oil via the tap, wiping the interior with a non-abrasive cloth, and washing baskets and lids separately. The Scotch-Brite exterior resists stains but should be wiped to remove oil splashes. IPX5 handles can be rinsed, though electrical components must stay dry. Routine cleaning requires no disassembly.
Model F2/8T-94ETX is a dual-vat fryer; single-vat versions are also available. Designed for professional catering, it is unsuitable for domestic use due to power and capacity requirements.
