A fixed braising pan heats a shallow stainless steel tank from below, transferring energy through a conductive base that spreads the heat evenly across the entire cooking surface. This method keeps the temperature steady and eliminates hot spots, so food browns uniformly whether it is seared, braised or simmered. The tank depth of 100 mm holds enough liquid for long, slow cooking while still allowing the operator to stir and turn ingredients without spillage.
The operator lowers the ingredients into the pre-heated tank, sets the thermostat to the required temperature up to 300 °C, and leaves the pan to maintain the heat without further adjustment. A single control governs the entire surface, so every part of the pan reaches the same temperature at the same time. When the cooking cycle finishes, the pan is switched off and the contents are removed with a perforated ladle or drained through the built-in outlet.
The unit is fabricated from 18/10 CrNi AISI 304 stainless steel with a Scotch-Brite satin polish finish. The worktop is 2 mm thick and the base is reinforced for high conductivity. Chromed details protect corners and edges from wear.
A 5.2 kW power rating draws a steady load on a 400 V three-phase circuit, the standard supply for professional catering equipment. The 60 kg weight keeps the pan stable on the floor or on a sturdy stand, while the 400 mm depth, 800 mm width and 280 mm height fit under most worktops or can be installed as a freestanding unit.
Cleaning follows the stainless steel construction: the tank is emptied, wiped down with a non-abrasive cloth and mild detergent, then rinsed and dried. The satin finish resists fingerprints and water marks, so the unit stays presentable between services.
The BRFD-84ETX is a fixed single-tank model designed for permanent installation in professional kitchens.
