Cooling Well | Canteen facilities
A cold chafing dish maintains prepared food at serving temperature without cooking it further. The unit circulates chilled air around four standard gastronorm pans, keeping salads, snacks and chilled drinks ready for self-service. A refrigeration circuit with R600a refrigerant absorbs heat from the interior and expels it at the rear, while a fan ensures even cooling across every pan position. The method prevents hot spots and keeps food safe between +2 and +8 °C, the range required for cold buffet items.
To use the chafing dish, slide the four GN1/1 pans into the stainless-steel wells. Plug the unit into a 220-240 V, 50 Hz supply; the 0.235 kW power draw suits a standard kitchen circuit. Set the electronic thermostat to the desired temperature within the +2/+8 °C band. The ventilated cooling system starts automatically, circulating cold air around the pans. Once the temperature stabilises, the unit holds the setting until the pans are removed or the power is switched off.
The exterior and interior are stainless steel, chosen for hygiene and resistance to corrosion in a busy kitchen. The 1456 mm width, 688 mm depth and 636 mm height allow the dish to drop into a counter or buffet line, leaving the top surface flush with the worktop. A total volume of 127 L accommodates the four pans and the air space needed for circulation. The 46 kg weight requires two people or a trolley to move the unit into position.
An electronic thermostat controls the cooling cycle, maintaining the set point without manual adjustment. The refrigerant charge of 135 g is sealed inside the system, so no topping-up is needed. Cleaning follows from the materials: wipe the stainless-steel surfaces with a damp cloth and mild detergent, avoiding abrasives that could scratch the finish. The ventilated cooling system has no filters to change, but the rear grille should be kept clear of dust to maintain airflow.
The CW4/V accepts standard GN1/1 pans, which are not supplied. It is designed as a drop-in unit for built-in installations.
