A spiral dough mixer kneads bread, pizza and pastry dough by driving a spiral hook through the mass while the bowl turns slowly beneath it. The hook stretches and folds the dough repeatedly, developing gluten strands without tearing them. This method produces an even, elastic texture that hand-kneading cannot match, and it scales to large batches without overheating the dough.
The operator loads the ingredients into the rotating bowl, closes the guard, selects the mixing time on the timer, and starts the motor. The spiral hook and bowl turn in opposite directions, pulling the dough towards the centre and then pushing it outwards. When the timer expires, the mixer stops automatically and the operator removes the bowl to divide and shape the dough.
The BHS-BERTA25 is built on a welded steel frame finished in food-safe epoxy paint. The bowl and spiral hook are stainless steel. A transparent polycarbonate guard covers the bowl during operation to prevent flour dust escaping and to protect the operator.
Controls consist of a start-stop push-button and a mechanical timer that sets the mixing duration. An optional second speed can be added at the time of order.
The 230 V single-phase motor draws 0.9 kW; the three-phase version draws 0.75 kW. Both require a dedicated circuit capable of supplying the stated current without voltage drop. The 60 kg weight means the mixer is moved on a trolley or pallet truck rather than lifted by hand. Its 470 × 625 mm footprint fits on a standard worktop or mobile stand.
The 32 L bowl holds up to 25 kg of dough, allowing bakeries to mix large batches in a single cycle. Stainless-steel surfaces are wiped down after each use; the guard is removed for washing in warm water and detergent. The epoxy-painted frame is cleaned with a damp cloth and dried to prevent corrosion.
An optional second speed is available at the time of purchase. The mixer is listed in the FIMAR bakery equipment catalogue under spiral dough mixers.
