A dough mixer combines flour, water, yeast and other ingredients into a smooth, elastic dough by mechanical kneading. The mixing arm rotates inside a fixed bowl, stretching and folding the mass repeatedly. This action develops gluten strands, trapping air and carbon dioxide to give the dough its structure and rise. Unlike hand kneading, the machine applies consistent force and speed, ensuring even hydration and temperature throughout the batch.
To use the FIMAR BHS-BERTA15, place the dry ingredients in the bowl first, then add liquids gradually while the arm turns. The 20 L bowl holds up to 15 kg of dough, allowing a single batch to supply a busy bakery or pizzeria. Once loaded, set the mixing time and speed; the machine will stop automatically when the cycle ends. The operator then removes the bowl, divides the dough and transfers it to proofing trays.
The 0.55 kW motor draws current from a standard 230 V single-phase circuit, the same supply used for most countertop equipment in a professional kitchen. The 46 kg weight keeps the unit stable on the worktop during operation, while the 410 mm depth, 580 mm width and 745 mm height fit within a typical bakery workstation. Stainless steel construction resists corrosion from dough acids and cleaning agents, and the smooth surfaces allow quick wipe-down between batches.
Cleaning involves removing the bowl, scraping out residual dough, then washing the bowl and mixing arm with warm water and detergent. The fixed base is wiped with a damp cloth, avoiding immersion to protect the motor and controls. Regular inspection of the drive belt and lubrication points maintains performance and extends service life.
The BHS-BERTA15 is catalogued under dough preparation equipment, alongside spiral and planetary mixers for medium-scale production.
