A dough mixer combines flour, water and yeast into a smooth, elastic dough by kneading the ingredients with a spiral hook. The hook rotates inside a fixed bowl, stretching and folding the mixture to develop gluten. This mechanical action replaces hand-kneading, producing consistent texture and even hydration across large batches without operator fatigue.
The operator loads the bowl with the measured ingredients, secures the lid, selects the mixing time and starts the cycle. The spiral hook turns at a single speed, pulling the dough towards the centre and then pushing it outwards against the bowl walls. The adjustable height of the mixing head allows the operator to raise it clear for loading and unloading, then lower it into the bowl for the cycle. Once the timer expires, the operator lifts the head, removes the dough and cleans the bowl and hook.
The BHS-12CNS is built with a stainless steel bowl and mixing arm, mounted on a painted steel frame. The height adjustment is manual, using a lever on the side of the head. A single rotary timer controls the mixing duration, and a start button begins the cycle. The voltage requirement of 230 V matches a standard single-phase kitchen circuit, avoiding the need for a dedicated three-phase supply.
A 16 L bowl holds up to 12 kg of dough, suitable for medium-scale production of bread, pizza bases and sweet doughs. The overall footprint of 650 mm by 350 mm fits on a worktop or mobile stand, while the height range from 620 mm to 1060 mm allows the operator to set the head at a comfortable working level. The unit weighs 61 kg, requiring two people or a trolley to move it into position.
Cleaning involves removing the bowl, washing it in a sink or dishwasher, and wiping the mixing arm and frame with a damp cloth. The lever and timer should be kept dry to prevent corrosion.
Optional extras include a second mixing speed for lighter doughs and special voltages for non-standard supplies.
