A cold beverage dispenser keeps slushes, sorbets and frozen drinks at serving consistency by circulating chilled liquid through two insulated tanks. The refrigerant absorbs heat from the mixture, lowering its temperature until it reaches the thick, pourable texture that customers expect. Continuous agitation prevents ice crystals from forming, so each portion tastes smooth and evenly flavoured. The process runs quietly behind the counter, allowing staff to serve without interruption while the machine maintains the correct chill and viscosity throughout service.

To operate the SORBY EVO2, the operator fills each 10 L tank with the prepared beverage base, then switches the unit on. Mechanical controls let the user select either production mode for daytime service or night mode to save energy. Once the desired consistency is reached, the dispenser holds the mixture at that temperature until the last portion is drawn. A safety stop system cuts power if the lid is opened, protecting both the product and the operator.

The cabinet is finished in black or white and measures 390 mm wide, 515 mm deep and 685 mm high, fitting neatly on a worktop or under a counter. Two 10 L tanks sit side by side, each with its own dispensing tap. The refrigerant R290 circulates through an air-cooled condenser mounted at the rear, eliminating the need for water connections. The 0.5 kW compressor draws 220-240 V single-phase power, matching the standard supply found in most professional kitchens. At 51 kg, the unit is stable on the floor yet light enough to reposition with a trolley.

Stainless-steel tanks and food-grade seals are easy to wipe clean after service. The condenser coil should be brushed free of dust every week to maintain cooling efficiency. A removable drip tray catches any spillage from the taps, simplifying daily upkeep.
