Fry dump singlephase with infra-red heater. Bowl cm. 30,5x51x16,5h with perforated double bottom
A drop-in electric bain-marie keeps prepared dishes at serving temperature without drying or scorching. It works by circulating warm water in a tank beneath the food wells. An electric element heats the water to a gentle, even temperature, while the water transfers that heat to the perforated false-bottom containers above. This method prevents direct contact with the heat source, so sauces, soups and sides stay moist and ready for plating. The operator lowers the perforated false-bottom tanks into the heated water, fills them with the dishes to be held, and sets the thermostat. Once the water reaches the chosen temperature, the bain-marie maintains it automatically. The infrared heater above the tank adds radiant warmth to the surface, keeping the top layer of food at the same temperature as the rest. No stirring or rotation is needed; the unit does the work while the kitchen staff attend to other tasks. The BSD-64EM is built as a drop-in module for existing worktops. The 2 mm thick CrNi 18/10 AISI 304 stainless steel worktop resists corrosion and stands up to daily cleaning. Chromed details protect edges and fixings, and the Scotch-Brite satin polish finish reduces fingerprints and scratches. The unit is secured with a fixing system that anchors it to the surrounding counter, preventing movement during service. Controls are minimal: a thermostat sets the water temperature, and the infrared heater is controlled by a separate switch. The 1.47 kW power rating means the bain-marie draws a modest load on a standard 230 V single-phase circuit, suitable for most professional kitchens. The 20 kg weight allows two staff to lift and position it during installation, while the 400 mm depth, 600 mm width and 250 mm height fit into a standard worktop cut-out without overhang. The satin-polished stainless steel tank and chromed fittings wipe clean with a damp cloth after each service, so sauces and stocks never linger between batches. The stainless steel surfaces can be wiped with a damp cloth and mild detergent after each service. The perforated false-bottom tanks lift out for thorough washing, and the water tank itself can be drained and scrubbed to remove scale. Chromed fixings and edges are cleaned with non-abrasive polish to maintain their finish. The catalogue places the BSD-64EM in the drop-in bain-marie section, alongside other modular hot-holding solutions for professional catering.
