Professional blast chilling and freezing unit for rapidly cooling food products from +90 to +3 °C in 90 minutes or freezing them to −18 °C in 240 minutes. Equipped with a 5" touchscreen, 96 automatic programs and a temperature probe for precise process control.
A blast chiller freezer brings hot food through the danger zone in minutes, locking in texture, flavour and safety. The FAGOR CBC-101 HC lowers cooked dishes from +90 °C to +3 °C in one cycle and to -18 °C in another, using a high-velocity air stream that pulls heat away faster than a refrigerator can. The method stops bacterial growth, preserves moisture and keeps portions ready for storage or service without delay.
The operator loads up to ten GN1/1 gastronorm trays or sixty 60x40 containers onto the internal racks, closes the door and selects either the soft chilling cycle or the hard freezing cycle. Each cycle can be controlled by time or by the core temperature of the product, measured with the supplied probe. Once the target is reached, the unit automatically switches to a holding mode: +2 to +5 °C after chilling, below -18 °C after freezing. A 2.8-inch touch-sensitive control panel offers manual modes, three additional programmes (pre-chill, fish sanitisation and ice-cream hardening) and storage for up to twenty custom cycles.
The cabinet is built entirely from stainless steel, inside and out, with 35 mm of high-density polyurethane insulation that reduces cold loss and eliminates CFCs. The refrigeration system uses R290 refrigerant, copper-tube evaporators with aluminium fins and a hermetically sealed compressor. A removable front ventilation grille gives easy access for cleaning. The door has an integrated handle, an automatic closing mechanism and a stay-open feature at 120°; a built-in anti-condensation system keeps the frame dry.
The 230 V single-phase supply matches standard UK commercial circuits, while the 153 kg weight requires a fixed position or a sturdy trolley. The 790 mm width and 800 mm depth fit a standard worktop footprint, leaving 1420 mm of height for clearance. A manual defrost cycle evaporates meltwater automatically, reducing daily maintenance.
Cleaning follows from the construction: wipe the stainless-steel interior and exterior, remove and rinse the ventilation grille, and sanitise the temperature probe after each use. The unit is supplied with a standard probe; an optional heated needle probe is available for deeper product monitoring.
