Professional blast chilling and freezing unit for rapidly cooling food products from +90 to +3 °C in 90 minutes or freezing them to −18 °C in 240 minutes. Equipped with a 5" touchscreen, 96 automatic programs and a temperature probe for precise process control.
A blast chiller freezer pulls heat from hot food at speed, stopping bacterial growth and locking in texture, moisture and flavour. Instead of the slow cooling of a refrigerator, a powerful fan circulates cold air across every surface, dropping the core temperature in minutes rather than hours. The result is food that stays safe, retains its quality and can be stored or finished later without risk of spoilage.
The FAGOR CBC-051 HC carries out two distinct cycles. In the soft cycle, hot food is chilled from +90 °C to +3 °C in 90 minutes, preserving freshness for later service or refrigerated storage. In the hard cycle, the same load is frozen to -18 °C in 240 minutes, extending shelf life for weeks or months. The operator loads the trays, selects the cycle and either a set time or a target core temperature measured by the included probe. Once the cycle ends, the unit automatically shifts to a holding mode, maintaining +2 to +5 °C after chilling or below -18 °C after freezing.
The interior and exterior are fully stainless steel, chosen for strength and resistance to corrosion in busy kitchens. A 35 mm layer of high-density polyurethane insulation, free of CFCs, minimises cold loss and keeps energy use low. The refrigeration system uses R290 refrigerant, with copper-tube evaporator coils and aluminium fins for efficient heat exchange. A hermetic compressor and ventilated condenser complete the circuit, while a removable front grille allows easy access for cleaning.
Controls are grouped on a 2.8-inch touch-sensitive panel. The operator can choose between manual soft or hard cycles, guided by time or by the core temperature measured by the probe. Three additional programmes cover pre-chilling, fish sanitisation and ice-cream hardening. Up to twenty custom programmes can be stored for repeated use. A manual defrost cycle is included; any meltwater is automatically evaporated.
The unit accepts five GN1/1 or EN 60x40 trays, giving a footprint of 790 mm wide, 700 mm deep and 850 mm high. At 106 kg, it is moved on castors or a trolley. The 230 V single-phase supply matches standard commercial circuits. A 60 Hz version with the same power ratings is available as a variant.
Cleaning follows from the construction. The stainless-steel interior wipes clean; the removable grille and front ventilation panel give access to the refrigeration components. The probe is washed separately after each use. The automatic door closer and stay-open mechanism simplify loading and unloading, while the anti-condensation frame keeps the seal dry.
The catalogue places the CBC-051 HC in the professional blast chiller and freezer section, alongside larger and smaller models for different kitchen scales.
