Professional gas bain-marie, designed to keep food at serving temperature in professional kitchens. The durable AISI 304 stainless steel construction ensures safe operation, even heating and easy daily maintenance.
GN 1/1 + 2 GN 1/4, H-150 mm
A gas bain-marie keeps prepared dishes at serving temperature without drying or burning. The BMT-66G uses a gas burner beneath a water-filled tank to create gentle, even heat. Water conducts heat more gradually than air, so the food stays moist and reaches the same temperature throughout the container. This method is essential for sauces, soups and delicate items that must not separate or overcook.
To use the unit, fill the tank with water to the marked level, then place gastronorm containers inside. Ignite the burner with the piezoelectric starter; the pilot flame keeps the main burner alight. A thermocouple monitors the flame and shuts off the gas if it goes out, while a thermostatic safety valve prevents overheating. The water temperature remains steady, keeping the food warm until service. When finished, open the front drain tap to empty the tank and wipe the interior.
The BMT-66G is built from 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish. The worktop is 1 mm thick with rounded edges, and chrome-plated components add durability. A rear splashback protects the wall, and IPX5-rated control knobs resist water ingress during cleaning.
Controls include a gas knob with piezoelectric ignition and a thermostatic dial that adjusts the water temperature. The rear flue outlet directs combustion gases outside, and adjustable feet ensure the unit sits level on uneven floors.
The 4.5 kW power rating indicates the gas load the appliance draws, which determines the supply pipe and regulator needed. The 600 × 600 mm footprint fits standard worktop spaces, while the 28 kg weight allows two staff to move it without a trolley. The tank accepts one GN 1/1 and two GN 1/4 gastronorm containers up to 150 mm deep, matching common serving pans.
Cleaning involves draining the tank, removing the front control panel to access internal parts, and wiping down the stainless steel surfaces. The unit comes with nozzles for natural gas and propane, allowing installation on different supplies.
The BMT-66G is listed under gas bain-maries in the professional catering catalogue.
